What is the difference between Masa Harina & Normal Corn Flour

Masa Harina is made through Nixtamalization process (traditional Mexican method) where dried corn kernels is cooked with water & lime/cal to bring out the best nutrition (vitamin B3, calcium) in the corn. Meanwhile, corn flour is just dried corn kernels grinded into fine coarsed flour.

What can Masa Harina be used for

The main product of Masa Harina is Corn Tortilla which can be used further to make Tortilla Chips, Tacos (soft corn or hard shells), Tostada and Taquitos. You can also use the masa harina to make Tamales, Empanada.

Should i keep the Masa Harina flour in Chiller/ Refrigerator

No need to stpre in chiller/refrigerator. You can store the masa harina in room temperature as it is already dried.

How to make Corn Tortilla from Masa Harina flour

Step by step process

• Mix the masa harina flour with water in proportion 1 (flour) : 2 (water)
• Boil the water in sauce pan then reduce the heat to minimum
• Add the mixed masa harina flour into the pan and slowly stir to make a dough until slightly thickened. It will take 1-2 minutes.
• Remove the dough and let i cool.
• Once the dough is warm, kneed for about 1 minute to get a smooth and elastic dough. In case you make a lot of dough, you may use standing mixer (use slow speed). Add small amount of water if needed.
• Weight the dough according to the desired tortilla size and shape it into a ball.
• Press the dough using a Tortilla Press to make " a flat round dough"
• Grill the flat round doughs using griddle or flat grill pan, flip 3-4 times. The process would take around 40-50 seconds.

Can i keep the masa harina dough in chiller/refrigerator

Yes, you can store the dough in chiller/refrigerator overnight. Put the dough in a bowl and cover the top with plastic wrap. Add small amount water to rehydrate the dough before pressing the dough using the Tortilla Press.
